The Commis Chef Apprentice supports kitchen operations by assisting with food preparation, cooking, and maintaining hygiene standards. This entry-level role offers hands-on learning in a professional kitchen environment under the supervision of senior chefs, developing culinary skills essential for a future chef career.

Key Responsibilities:

• Assist in preparing ingredients by washing, peeling, chopping, and measuring according to recipes
• Support cooking and plating of dishes following restaurant standards
• Ensure compliance with health, safety, and food hygiene standards (HACCP adherence)
• Assist in stock rotation, receiving deliveries, and managing kitchen supplies
• Maintain cleanliness and organization of kitchen workstations
• Learn and rotate between kitchen sections (meat, fish, vegetables, pastry, etc.)
• Participate in training sessions and complete off-the-job learning modules
• Help reduce food waste through proper portion control and storage

Key Performance Indicators (KPIs):

• Timely preparation of ingredients for service with minimal waste (target: >95% accuracy)
• Compliance with food safety and hygiene audits (target: zero non-compliance issues)
• Attendance and completion of scheduled training sessions and off-the-job hours (target: 100%)
• Ability to follow recipes and plating instructions accurately (target: 98% dish consistency)
• Contribution to smooth kitchen operations and teamwork (target: positive feedback from supervisors)

Successful candidates must be Lambeth Residents.

Minimum 30 hours/week

Apprenticeship term is for a minimum of 12 months
